Beskrivelse

The 2016 vintage Pinot Noir comes from a 3.25ha vineyard planted to two different clones. Hand harvested. Vinen er dejlig kompleks og stor duft med en behagelig røget eftersmag af en verdensklasse Pinot Noir vin samt med fylde og vellugt som sjældent opleves udenfor Bourgogne. Elgin og er plantet 310 meter over jordens overflade. Vinen vil udvikle sig 3-5 år, men er absolut drikbar nu.

The wine has a medium colour intensity of Ruby red. The nose is delicate and hints of dark cherries and musk sweets. There is a spice contribution from the wood of cinnamon and star anise. Savoury notes of the oregano, basil and bay leaf found in a bolognaise sauce round off the bouquet. The first taste impression is of the silkiness and fineness of the tannins. All the elements of the bouquet persist. The balanced wooding, the gentle handling of the grapes during the ferment, shows in the quality of the tannin profile.

It is fine-grained but lends a strength and presence to the wine not apparent from the entry. The 2017 vintage Pinot Noir comes from a 3.25ha vineyard planted to two different clones. Hand harvested, destemmed, fermented in open fermenters for a period of ten days, utilizing ambient yeasts and delestage to coax both flavour and colour from the fruit. The must was lightly pressed, racked off into French oak barrique (20% new) and malolactic fermentation occurs in barrique.

The wine was barrel matured for a period of eleven months and lightly filtered prior to bottling to maintain the wines integrity and delicate Pinot flavour spectrum.
